1 cup water
2 pkg yeast
mix and let stand 10 minutes
2 1/2 cups flour
4 Tbsp olive oil
1 Tbsp sea salt

put 2 cups flour into bowl , pour yeast mixture over. Stir and knead, adding 1/4 cup flour at a time, knead about 10 minutes. coat bowl w/1 tbsp oil, turn dough into it turning to coat. let rise until couble. preheat oven 400 degrees. press into 11 inch pan with fingers making small wells. Brush w/remaining oil and sprinkle with salt. Bake about 28 minutes, or till golden. Cool in pan 10 minutes - remove from pan.
