Ingredients
500g pure ground almonds
300g light brn soft sugar (used 250g, you can use demerara sugar if you like or any sugar)
150g flour sieved (used farina tipo 'oo' Di grano tenero)
1 teaspoon vanilla essence
2 tblspoons cocoa
Juice and grated rind of a lemon
Grated rind of an orange
Grated rind of a mandarin
3 tblspoons Anisette (optional)
 
2 tblspoons orange blossom water (optional ilma zahar)
1 egg white beaten
1/2 teaspoon cinnamon
1 teaspoon mixed spice
Honey for brushing top of Kwarezimal
Chopped roasted almonds
2 rice paper (karti ta' ostji) to cover dish

Instructions
Put all the ingredients in a big bowl, except the honey, chopped almonds and egg white. Knead lightly well mixed. Beat the egg white and add it to the mixture to form a paste. If the dough or paste is still like crumble or stiff, add a little water, but not too much be careful. Take the paste from bowl and lay it on a work top or table to form it into a log. Cut the log into pieces of 5cm wide and 8cm long, thick 2cm each. Press each one into ovyals with your palms of your hand, to form a Kwarezimal. Then take a baking dish and cover it with rice paper. Put the kwarezimal in it and leave a little space between them. Bake on 180c for 20- 25 minutes. When they are ready, put the dish on a wire rack and while still hot, brush them with honey and sprinkle some chopped almonds. Enjoy! They are Delicious!! --)
