     Lemon-Blueberry Yogurt Cake

Ingredients
1 cup plain greek yogurt
1/2 cup truvia baking blend
6 egg whites
1/2 cup no added sugar apple sauce
zest from 2 lemons
1/2 tsp vanilla extract
1 1/2 cups white whole-wheat flour
2 tsp baking powder
pinch of salt
 
1 1/2 cup blueberries
1/3 cup lemon juice
2 tbsp-2 tsp truvia baking blend

Instructions
Whisk the greek yogurt, ½ cup truvia, 6 egg whites, apple sauce, zest from 2 lemons, & vanilla extract. Add & whisk the flour, baking powder, & salt. Gently mix in blueberries. Bake at 350 for 45 mins. Meanwhile cook the lemon juice & 2 tbsp-2 tsp truvia until sugar is dissolved. Let cake cool for 5 minutes. Poke holes with a tooth pick all around the top of the cake & pour lemon-sugar mixture over top.
