2 Can Rotel Tomatoes/Chilis (I use 1 habanero, 1 regular)
1 package (you judge size) andouille sausage
4 midsize potatoes, sliced thin
1 32 oz container chicken stock
Instructions
Slice sausage thin, brown lightly in saucepan/stock pot. Once browned to your liking, combine all other ingredients. Simmer on medium-medium/high until potatoes are tender.
Serving
Suggestions
Serve very hot with cheese sprinkled on top. Oyster crackers if desired.
