Prepare your charcoal grill for indirect heat. I
prefer using a chimney starter because the charcoals
are ready in 20 mins or less. Once you have charcoals
ready preheat grill to 250 degrees. Spray cooking
grates with cooking spray. Place your wings on grate
and dust all wings with each seasoning equal parts.
try not to go to heavy on one or the other. Cook
without opening for about 1hr; checking grill temp
regularly to make sure it isn't to hot. Ideal cooking
temp is between 225 and 250. After 1st hr flip wings,
you made need switch some of the wings closer to the
coals with a wing further away from coals. Once
flipped season other sides evenly again. Cook an
additional hour or so or until wings are tender. Add
bbq sauce last 30 mins. Baste one side cook 15mins,
flip and baste otherside cook 15 more mins.
