     Banana Nut Bread

Ingredients
1/2 C margarine
1 C sugar
2 eggs
1 C mashed banana
1/4 C milk
1 tsp. lemon juice
2 C flour
1-1/2 tsp. baking powder
1/2 tsp. baking soda
 
1/4 tsp. salt
1/2 C chopped nuts (optional)

Instructions
Cream together margarine and sugar. Beat and add eggs. Add mashed bananas, milk and lemon juice and mix. Sift together dry ingredients and add to mixture. Stir in chopped nuts if desired. Bake in greased and floured loaf pan at 325 degrees for 1 hour.
To reduce fat, replace margarine with equal amount of nonfat plain yogurt or applesauce and use skim milk.
