4 c italian soft wheat or normal flour
1.5 tsp yeast1.5 tsp kosher salt
1.5 c ice-cold water2 Tbsp olive oil

Place first 3 ingredients in bowl and mix. Gradually add water and oil and beat for 3 min. Beat at high speed for 5 min.
Cover dough with plastic wrap and let raise in warm 85 degree place. Let raise 1.5-2 hours or until dough has doubled in size. Punch dough down and shape into a large ball; cut dough into 4 equal pieces.
Roll each dough into ball. Stretch top of dough around outside of ball, and pinch the edges together, forming a smooth ball
Place dough balls on a lightly greased baking sheet , and dust with flour. Cover with damp towel. Let stand in a cool place for an hour
