     Salted Caramel Chocolate Chip Cheesecakes

Oreo Crust
18 whole Oreos double stuff or regular
1/4 cup unsalted butter
Cheesecake Filling
16 oz full fat cream cheese, softened
3/4 cup sugar
1/4 cup yogurt or sour cream, greek or regular
2 large eggs
1 tsp vanilla extract
1 cup mini semi sweet chocolate chips
Homemade caramel sauce

350 12 count cupcake pans Crust- Food Processor- Pulse oreos into fine crumb. Stir crumbs and melted butter, together. Press heaping TBSP of mixture into bottom of each liner. 16-18 cups. Bake batches 5 mns
Filling- Beat cream cheese medium. Add sugar, and yogurt. Add eggs, one at a time, beating on low. Beat in vanilla, and cchips. Spoon batter into crusts, nearly full. 20-23 mns centers may have risen up, but will deflate as cools. Transfer to refrigerator 2 hrs.
Before serving top with caramel sauce and additional chocolate chips. Cover 5 days refrigertor; Freezer 2 mos without caramel . Thaw refrigerator overnight
