     Maryland Fried Tomatoes

Ingredients
Tomatoes- not too soft- medium to large size
Eggs
Italian Flavored Panko
Italian Flavored Bread Crumbs
Milk
Butter
Old Bay Seasoning
Flour
 

Instructions
Slice tomatoes to about 3/4 inch. Place between paper towels to absorb liquid. Beat an egg and add a bit of milk and whisk. Mix Panko/Breadcrumbs/Flour- in equal portions( but a little less flour). and add Old Bay Seasoning to taste.
Dip tomato in breadcrumb mixture and then dip in egg mixture- drain excess egg mixture off and then dip in breadcrumb mixture again. Place on plate with paper towels on it. Place in refigerator to firm up - not long. Saute in pan with melted butter- turn once.
Melt butter in saute pan and fry tomatoes till brown and crispy- turning once. Only takes about 5 minutes.
