     Passover Sponge Cake

1 1/2 c. sugar
1 lemon rind
11 eggs
1 c. cake meal
1/2 c. orange juice
1/4 c. potato starch
dash of salt

Add sugar to well-beaten egg yolks. Then add grated lemon rind and orange juice. Sift together potato starch, cake meal and salt and add to mixture. Mix well. Fold in stiffly beaten egg whites. Bake 350 degrees for one hour in ungreased tube pan where the bottom can be removed Turn upside down in pan to cool.
