Line a 9X13 baking pan with aluminum foil. shiny side up
smooth out any wrinkles. Heat 1 in. of water in a saucepan over
low heat until steaming.

zpuy sll puy 3/4 chocolate morsels in a heatproof bowl. Set the
bowl over the saucepan of steaming water. Heat until 1/3 of the
chocolate is melted. Remove the bowl from the saucepan keep
the steaming water over low hear. Gradually stir the reserved
chocolate into the bowl a few pieces at a time until all the
chocolate is melted. Return the bowl to the saucepan 5-10
seconds at a time.

wipe off any moisture from the bottom of the bowl. Stir HALF
peppermint extract into chocolate. then quickly poor into
prepared baking dish and spread in an even layer. firmly tap the
dish against the counter to remove any air bubbles. Set aside at
room temperature until almost set (10 min)

While Chocolate is setting up repeat the melting process with
the White Chocolate add the remaining peppermint extract into
the white chocolate. Spread over the Set Chocolate. Sprinkle
with processed candy cane dust. Set aside at room temp for an
hour then beak into pieces and store for up to 2 weeks.
