1 cup bulgar wheat
1 1/2 cups boiling water
1/4 cup freshly squeezed lemon
1/4 cup olive oil
1 teaspoon kosher salt
1 bunch minced scallions
1 cup chopped mint
1 cup chopped parsley
1 Seedless cucumber chopped
2 cups cherry tomatoes - halved
Feta cheese

Put the bulgar wheat in a medium bowl. Pour boiling water lemon juice, olive oil and salt. Cover and let sit about an hour. If there is a little juice left, that's fine. Add black pepper & correct for seasonings. Mix in the veggies and herbs. You can top with the olives and feta as you see fit.
Serving Suggestions
You can serve as side dish, light lunch, or use as topping for a tossed salad.
