     Blackeyed Peas with Spinach Curry

Ingredients
For masala
1 tspn cumin
1 tpsn coriander
1 cup of coconut (can substitute with coconut milk)
1 tspn chili powder (can substitute with 1 kashmiri chilli)
.5 tspn turmeric powder
.5 tspn mustard seeds
1 pkg frozen black eyed peas
1 small bunch of spinach leaves
 
1/4 cup toor dhal
Salt to taste
For seasoning
4 curry leaves
1 crushed garlic
1 tsp. mustard seeds

Instructions
In a pan roast roast all the spices and then grind in a blender with one cup of hot water.
Boil some toor dhal in a pot when soft add one pk of black eye peas and one bunch of chopped spinach.
Add the ground masala and salt. After one boil it should be cooked.
Season with mustard seeds, crushed garlic and curry leaves and add to the curry leaves.
Serving Suggestions
Serve with white or brown cooked rice
