1 cup colby- monterey jack cheese OR 1 cup shredded cheddar
salt and pepper to taste
1 cup BBQ sauce
Instructions
slice chicken in half, like a bun, pound until
about 1/4 inch thick. salt and pepper to taste.
Mix cream cheese and other cheese of you choice
together until smooth, smear cheese mixture into
the jalapenos, about 1 TBS in each, use up all the
cheese between all the peppers.
Place the pepper on the pounded chicken and wrap
up best you can. Wrap chicken in two slices of
bacon. Covering chicken completely.
Bake chicken at 400 degrees for 20 minutes,
flipping half way through. Then reduce heat to
375 degrees, if preferred switch out pans to
loose some bacon fat, cover chicken with BBQ
sauce cook for an additional 10 minutes, or
until chicken is cooked through, baste with BBQ
sauce as needed. Once cooked through broil for
2 minutes to set the sauce.
