Finely grind peppers, cucumbers and onions in
food processor. Place in glass or plastic
bowl, sprinkle with all the salt, cover with
cold water and let stand for 2 hours. Drain
thoroughly, pressing on the vegetables to
remove excess liquid. Combine the sugar, spice
bag and vinegar in a large non-reactive pot
(not aluminum) Bring to a boil and simmer for
15 minutes. Add the vegetables and simmer for
10 minutes. Remove the spice bag. Pack into
hot, sterile jars and process for 10 minutes in
boiling water bath.
