Cook and shred chicken. Preheat oven to 350. Melt butter in large
skillet. Saute onion if you want onions in it. Add cream cheese
and stir until melted and butter and cream cheese are combined.
Add chicken and stir well. Remove from heat. Spray a 9x13 dish
with cooking spray. Fill eight flour tortillas evenly with chicken
mixture. Roll and place seam side down in prepared pan. Sprinkle
grated monterey jack cheese on top of rolled tortillas. Mix
evaporated milk and milk and drizzle on top of cheese. Bake for
20-30 minutes or until cheese is desired brownness
