     Zucchini Bread

Ingredients
3 eggs
1 c. oil
2 c. sugar
1 t. salt
3 t. cinnamon
1/2 c. chopped nuts - optional
3 c. flour
1/2 t. baking powder
2 c. grated zucchini
 
3 t. vanilla
1 t. soda
Instructions
Beat eggs until light and fluffy. Add oil, sugar, zucchini & vanilla. Mix lightly but well and add all remaining ingredients.
Mix until blended.
Put in 2 - 9X5X2 inch pans and bake at 325 for 1 hour or until bread tests done.
