     Peanut Brittle

Ingredients
1 c raw Spanish peanuts
1 c granulated sugar
1/2 c white corn syrup
1/8 tsp salt
1 Tbsp butter
1 tsp vanilla
1 tsp baking soda
 

Instructions
Stir together in a 2 quart bowl or measuring cup the peanuts, sugar, syrup and salt. Microwave on full power for 8 minutes, stirring twice during cooking time.
Add to the syrup mixture and blend well the butter and vanilla. Microwave on full power for 2 mn Peanuts will be lightly browned and the syrup very hot.
Add 1 tsp baking soda and stir gently until mixture is foamy and starting to turn a medium caramel color. Then pour quickly onto a well-buttered cookie sheet. Spread as thinly as possible.
When cool, break into pieces. Store in an airtight container.
