1/4 c pineapple juice from can of drained, pineapple rings
1 egg
1/2 melted butter
1/2 c milk
1-1/2 c flour
pinch of salt
2 tsp baking powder
1/2 c granulated sugar
Instructions
In a heavy fry pan melt the butter and add beown sugar. Take off stove and add 1/4 c pineapple juice. Place drained pineapple rings over the sugar-butter mixture.
In a bowl beat the egg, 1/2 c of melted butter and the milk.
In another bowl put the flour, salt, baking powder and granulated sugar. Add the egg milk mixture to flour. Beat until smooth. Pour over pineapple mixture.
Bake for 35 minutes at 400°. Leave in pan for 2 minutes then invert on the serving plate.
