     Chicken Tuscan Lemon

chicken - breasts flattened
salt - Kosher
olive oil - 1/3 cup
lemon juice - 1/3 cup
lemon zest - 2 tsp
garlic - 3 cloves minced
rosemary - 1 tbls fresh minced
pepper - fresh black
lemon - 1 halved

Sprinkle chicken with 1 tsp sale on each side. Combine olive oil, lemon zest, lemon juice, garlic, rosemary and 2 tsp pepper in a small measuring cup. Pour lemon marinade over chicken, turning it in the dish. Cover dish with plastic wrap and refrigerate for at least 4 hours or overnight. Turn chicken 2-3 times while marinating.
When ready to grill prepare one side of the grill with low heat and the other side with high heat. Place chicken on the cooler side skin side up and weight down with a dish and cook 12-15 minutes. Then put skin side down and cook. Cook the lemon halves cut side down for the last 10 minutes. Let chicken rest for 5 minutes before serving.
