     Soy Sauce Chicken

Ingredients
SAUCE
1/2c of low sodium soy sauce
1/2c rice wine or sake
2tb of sesame oil
4tb of sugar
1tsp dried chili flakes or 1/2tsp fresh chili diced
1tb vegetable oil
15 cloves of garlic, peeled and left whole
 
6 inches of fresh ginger, peeled and sliced to thickness of liking
2-3lb of chicken (wings and drumsticks)
Optional
Some Thai basil leaves

Instructions
Add ingredients to make sauce in a medium size bowl. Set aside.
Add 1tb vegetable oil. Heat pan (that has a lid) on medium low heat uncovered. Add garlic and ginger until aromatic. Turn up heat to high. Add chicken and brown. Add sauce. Stir chicken to coat. Bring to boil, cover pan with lid and drop heat to medium low. Cook for 15 minutes.
Remove lid. Stir in basil leaves and allow sauce to continue to boil and thicken. Cook to desired consistency and then serve.
