     Dip, Spicy Corn

Ingredients
2 Tablespoons butter
1 yellow onion chopped
5 cloves garlic 1 red bell pepper chopped
3 cups corn (fresh or frozen)
2 cups shredded cheddar cheese
2 cups shredded pepper jack
1 1/2 cups cream cheese
1 1/2 cups mayo
1/2 cup chopped cilantro
 
1 cup green onions chopped
2 Tablespoons chipotle in adobe puree
2 Tablespoons hot sauce, more if you like it spicy
1/2 teaspoon salt
1/2 teaspoon pepper

Instructions
Preheat oven to 350. Heat oil in a large skillet over medium heat. Add butter and saute onions, garlic, bell pepper and corn until soft and translucent, about 5 minutes. Remove from heat and stir in cream cheese until melted. Mix in the remaining in a large bowl with the veggies and cream cheese mixture. Bake for 20 - 25 minutes, or until the top is golden brown and the edges are bubbling. Serve hot out of the oven.
