slice chicken breast butterfly style and pound to flatten
slightly, set aside.
in food processor mix spinach, feta, cheese, pine nuts, garlic,
and lemon juice. Add enough bread crumbs to bind mixture,
it will have a meatloaf type consistency.
Spoon spinach mixture onto half of each chicken breast and
fold over, securing with toothpick.
Lightly coat chicken in olive oil and grill until done.
