     Lamb Flatbread Tacos

6 oz container plain 2% Greek yogurt
1 T. olive oil
3/4 t. black pepper, divided
1/4 t. kosher salt, divided
4 multigrain flatbreads
1 english cucumber
12 oz ground lamb (or ground beef)
1 14.5 oz can unsalted italian style diced tomatoes

1. Preheat broiler to high 2. Combine yogurt, olive oil, 1/4 t. pepper and 1/8 t. salt and set aside 3. Broil flatbread 1 minute or until toasted, turning at 30 seconds. 4. Cut cumcumber into small slices. 5. Heat skillet over medium-high heat. Add ground beef to pan, stirring to crumble. Drain after mostly browned. Add tomatoes to pan, cook 6 minutes. Stir in remaining salt and pepper.
Spread yogurt mixture, lamb mixture then top with cucumbers.
