     Sweet-pea burgers

Ingredients
1/2 C mayo
1/2 C Dijon mustard
1/4 C honey
2 of sweet potatoes holes poked with a fork
2_15 oz cans garbanzo beans,drained and rinsed
1 egg, beaten
1 tsp chili powder
2 cups fine breadcrumbs
 
1/2 cup grated parmesan
Salt and pepper
2 tbl. olive oil
2 tbl. butter
6 Hawaiian rolls
Sliced avacado
Choice of lettuce

Instructions
Honey mustard...mix mayo,honey and mustard
Heat oven to 400,st potatoes on baking sheet and bake 1 hour...cool Halve sweet potatoes,scoop flesh into a medium bowl,mash with garbanzo beans, add egg,chili powder,flour,breadcrumbs,grated cheese,salt and pepper,mix well....form into 6 patties
In skillet melt butter and oil,swirling together,add the patties to the skillet and cook until brown and crispy about 5 minutes per side...transfer to paper lined plate to drain. Serve burgers on toasted bun, spread with mustard,top with avocado and lettuce
