     Eggplant Parmigiana

Ingredients
2 eggplants, sliced lengthwise 1/4 plus inches
salt
2 c no sugar marinara sauce (Trader Joe)
6 oz fresh mozzarella
20 basil leaves
2 oz parm/regianno cheese, grated
 

Instructions
Cook sauce and simmer by half 5-10 min.
Salt eggplant for 5 min. Wipe dry and grill on cast iron pan about 2 min on each side. Place in microwave until tender 1 min. Spray pan and put in slices, one quarter sauce,basil and parm. Repeat 4 times Place in 400 degrees oven for 8 min. Remove and place mozzarella in even layer and return to oven until cheese melts.
