Preheat the oven to 375. Take the butter out of the fridge to soften. Mix together the sorghum flour, millet flour, baking soda, salt, and xanthan gum and set aside. In a large bowl, whip together the butter, brown sugar, and white sugar.
Add the vanilla and the egg and beat well, until creamy and light. Gradually stir in the flour mixture, about 1/2 cup at a time. Stir in the chocolate chips. Spoon the batter into an ungreased 8 x 8-inch pan and bake for 15 minutes.
Allow to cool slightly, then cut into bars.
