     Fresh Summer Squash

Servings   50 3 oz servings

Ingredients
7 lbs Fresh Yello Squash
7 lbs fresh Zucchini
Wash squash and remove ends. DO NOT PARE
Cut in half and cut into slices
1/2 cup butter or marg and 1 cup Olive oilI Tbsp salt 1 Tsp black pepper
Season with 1/2 cup grated parm. cheese before serving
 

Instructions
1) Saute prepped squash in melted fat in small batches until tender. Sprinkle finished product q/ parm cheese 2) Serve immediately
