Blend oats until they resemble flour. Melt the
coconut oil.
Combine vanilla, egg, sugar and coconut oil. Beat
everything together until just combined. Stir in
the oat flour, baking soda, cinnamon and salt.
Stir until just combined and then fold in the dark
chocolate chips.
Chill the dough for at least an hour.
Preheat oven to 350F. Using a cookie scoop make
balls of the dough. Pack in the cookies tight
in the cookies scoop to avoid crumbly cookies.
(If using your hands, re-chill the dough for
15-30min after the balls are made). Bake for 8-
10 min or until brown around edges. Let it
chill for a while. This cookies are waaaay
better when completly cool (aka next day).
