Preheat oven to 350 degrees. Saute mushrooms in olive oil over medium heat until tender. Boil pasta according to package directions. Drain pasta and put in large mixing bowl. Melt butter and whisk with flour. Cook for 1 minute and slowly add milk. Whisk constantly. Bring the milk mixture to a simmer. Add shredded cheese and whisk until cheese is melted. Pour sauce over pasta and mix well. Add mushrooms again. Place in 9x13 inch casserole dish. Bake for 35 to 40 minutes. Top with extra cheese.
