Smear some peanut butter on a ritz cracker and top with another to make a sandwich. Place sandwich in bottom of a muffin pan, repeating until entire muffin tin is full. Reserve the last 8 ritz for use as topping later.
In a bowl, blend cream cheese and sugar until creamy. Add peanut butter, sour cream, vanilla and egg, blending until smooth and creamy.
Divide the peanut butter mixture equally atop the ritz cracker sandwiches in the muffin pan. Crush the remaining crackers in a baggie and sprinkle on top of peanut butter mixture. Sprinkle chocolate chips on top of cracker crumbs.
Bake for 22 minutes in 275 degree oven. Remove from oven and cool completely, then refrigerate for 2 hours before serving.
