1. Preheat oven to 350. Toast 1st six ingredients, grind them, and then add oil, garlic, ginger, saffron, salt, and pepper.
2. Rub over chicken, cover, and refrigerate for 2 hours to overnight.
3. Place chicken n heated pan with oil and brown. Wipe pan clean and then add oil and onion. Add rice to coat, then bay leaves, juice. lemon zest, olives, and chicken broth.
4. Turn off heat, place chicken on rice, cover with lid, and bake 30 minutes. Remove lid, allow liquid to cok off. Remove bay leaves.
