     Bake Ahead Morning Egg Cups

1 link sausage (about 3 oz.)
1/2 red bell pepper
2 Tbsp. chopped onion
1 Tbsp. flour
1 1/2 c. chopped baby spinach
2 eggs
3/4 c. egg whites (about 7 eggs worth)
1/4 c. lowfat milk
1/2 c. shredded sharp cheddar cheese

Preheat oven to 350. Saute sausage over medium high heat until no longer pink, about 5 minutes. Add the pepper and onion. Cook until veggies softened, about 3 minutes. Stir in the flour.
Add the spinach and cook another couple of minutes for it to wilt. Remove from heat and allow to cool a few minutes.
In a large bowl, whisk together the eggs, egg whites and milk until pale yellow and smooth. Stir in sausage mixture and cheese. Spoon mixture into 12-cup muffin tin with paper linings.
Bake until eggs are firm and dry, about 15 minutes. Let cool for 10 minutes before removing and allowing to cool on a baking rack.
