Take 1 cup green channa and soak it in slightly warm water for 1-2
days (will double amount when done)
Take 1 cup whole moong and soak in slightly warm water for 1-2
days (will double amount when done)
--every 12 hours or so, remove hard pieces that don't sprout

Steam channa and moong (separately) until soft but not
mushy. toss with a tiny bit of salt.
Take 1/2 cup boondi (sometimes supplied in the pani puri kit)
and place into warm water. After a few minutes, squeeze
excess water out and add to a bowl.

boil, peel and mash your potatoes. Add 2 pinches of cumin
and a pinch or two of salt to them. mix with the boondi.
Add cold water and ice to the Pani powder -mix well.
place the chutney into a bowl.
To eat- make a hole into the top of the puri. Add a little bit
of each bean, some potato/boondi mixture and top with
chutney and pani water. Pop it into your mouth all at once!

All ingredients can be found in the Asian store. Make sure
you get the Pani Puri box that comes as a kit (tonights
dishes were home-made, but it will be easier for you to buy
the kit and use the chutneys and pani powder supplied)
