     Bacon Chocolate Chip Cookies

Ingredients
10 Ounces of Bacon
2 1/2 Cups All Purpose Flour
1 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon backing powder
pinch cayenne pepper
1/2 cup unsalted butter
1 cup packed dark brown sugar
1 tablespoon vanilla extract
 
2 large eggs
8 ounces bittersweet chocolate

Instructions
Preheat Oven to 375 degrees and line to baking sheets with parchment paper.
Cut bacon into 1/2 inch pieces and cook in large skillet until golden and crispy (6-8 minute. Remove and drain on paper towels. save off the bacon fat - chill in the fridge until set.
Whisk together the flour, baking soda, salt, baking powder and cayenne in a small bowl. With electric mixer, beat the butter, chilled bacon fat, sugar, and vanilla until light and fluffy. Add the eggs 1 at a time, beating well after each egg. Slowly add the flour mixture and stir to combine. Stir in the bacon and chocolate chunks.
Drop by tablespoonfuls onto the baking sheet, leaving 3 inches between each one. Bake until set, 8 to 12 minutes.
