Leave root and 1 inch stem on beets, scrub with
brush.
Place beets in an 11x7 inch baking dish; add
1/2 cup water.
Cover and bake for approx. 35 minutes in a 375
oven.
Drain and cool.
Trim off roots and rub off skin.
Cut each beet into quarters; place in small bowl
and drizzle with 1 Tbs. dressing.
Place greens on a large platter, sprinkle with 1/4
tsp. salt.
Drizzle remaining dressing over the greens.
Top with beets, walnuts, cheese and chives.
