     Beet and Walnut Salad

Ingredients
Dressing-
1/3 cup fresh lemon juice
3 Tbs. sugar
2 Tbs. chopped shallots
2 tsp. olive oil
1/4 tsp. salt
Salad-
16 baby beets - approx. 1 pound
 
1/2 cup water
10 cups mixed salad greens
1/4 tsp. salt
3 Tbs. coarsely chopped and toasted walnuts
3 Tbs. crumbled blue cheese
1 Tbs. chives

Instructions
Whisk dressing ingredients and set aside.
Leave root and 1 inch stem on beets, scrub with brush. Place beets in an 11x7 inch baking dish; add 1/2 cup water. Cover and bake for approx. 35 minutes in a 375 oven.
Drain and cool. Trim off roots and rub off skin. Cut each beet into quarters; place in small bowl and drizzle with 1 Tbs. dressing.
Place greens on a large platter, sprinkle with 1/4 tsp. salt. Drizzle remaining dressing over the greens. Top with beets, walnuts, cheese and chives.
