     Upside Down Shepherd's Pie

Category   Entrees - Maindishes
Sub Category   None

Ingredients
1 - 20 oz. package of mashed potatoes
1 pound lean ground beef
1 Tbs. margarine
1 cup (half of a 10 oz. bag) of chopped onion
1/3 cup ketchup
1 tsp. dried dill weed
1/2 cup loosely packed fresh parsley - chopped
1/3 cup reduced fat sour cream
dill sprigs for garnish

Instructions
Preheat oven to 450. Spray a 1 1/2 quart casserole with cooking spray. Pres cold mashed potatoes on the bottom and up the sides of the casserole. Bake the potatoes about 20 minutes, until golden brown.
In a 10 inch skillet brown the ground beef until no longer pink, breaking it up as it cooks. Spoon the beef into a paper towel lined bowl to drain.
In the same skillet, melt the margarine. Add onions and cook 6-7 minutes until golden brown, stirring occasionally. Return beef to skillet with the onions. Stir in ketchup and dried dill. Reduce heat to low and stir in parsley and sour cream.
Spoon ground beef mixture into the mashed potato crust. Garnish with dill sprigs to serve.
