juice and rind of one lemon or 3 tablespoons lemon juice
1 cup sugar
1/2 cup shortening
2 eggs
1/4 teaspoon salt
2 teaspoons baking powder
2 1/4 cup sifted flour
1 cup milk
1/2 cup chopped walnuts

Mix lemon juice and 1/3 cup sugar; set aside. Cream remaining sugar and shortening Add eggs, one at a time. Sift flour, baking powder, salt and add alternately with milk. Add rind and nuts. Pour into 10x 5 x 3 inch loaf pan or two small pans. Bake 350 for one hour. Pour lemon juice and sugar mixture over bread when first removed from oven.
