Cook noodles, drain and rinse in cold water, toss
with a little sesame oil
Cut tofu into 1/2 inch cubes. Dry thoroughly with
paper towels. Finely chop garlic and set aside.
Grind wasabi peas and set aside. combine cayenne and
sesame seeds and set aside.
Heat oil with 1/2 tsp garlic and stir fry tofu (salt
lightly) about 10 minutes. Using a slotted spoon
transfer the tofu on paper towels. Once drained put
on a plate and sprinkle with soy sauce and toss with
cayenne-sesame mixture.
Add the ginger, garlic, sesame oil,sugar,salt and
add snap peas. Saute 3 minutes. Add a little
cayenne-sesame mixture and toss. Add noodles and
heat through. Divide noodles and peas on plates, top
with tofu and sprinkle with crushed wasabi peas
