     Pork Chops with Knockwurst

Ingredients
4 pork loin rib chops (1/2) inch thick
1 tablespoon vegetable oil
1 medium onion chopped
1 medium carrot chopped
1 stalk celery stick sliced
2 sweet pickles finely chopped
6 ounces knockwurst, cut into 1/4 inch slices
2 teaspoons caraway seed
1/2 teaspoon salt
 
1/2 teaspoon pepper
3/4 cup water
3 medium potatoes (1/8 inch slices)

Instructions
trim excess fat and head 10 inch pan. cook pork on medium untillbrowned on both sides (15 MINUTES)
cook + stir onion, carrot, celery, pickles, and knockwurst in skillet untill onion is tender (5 mins).
place pork on vegetable mixture sprinkle with caraway sed salt and pepper, pour water on the pork. place potatoe slices on top
Heat untill boiling, reduce heat. cover and simmer untill pork potatoes are tender(45 minutes)garnish is wanted.
