     Potatoes, Roasted Potatoes with Thyme

Ingredients
1 TBS olive oil
3 sprigs fresh thyme
1/4 tsp PeachDish salt or other favorite blend, or kosher
1 lb new potatoes
 

Instructions
Preheat oven to 425. Cut potatoes into 1 inch pieces. Pick and chop thyme leaves.
Place potatoes on heavy baking pan lined with parchment paper. Drizzle with olive oil. Season with thyme and salt. Place pan in preheated oven, roast 10 minutes. Remove from oven, give potatoes a stir, and continue baking until tender and lightly browned 6 to 8 minutes more
