1 Teaspoon dried basil or 1/2 cup fresh basil or spinach finely chopped
1 19 ounce can cannellini beans or other white beans drained
1 14.5 ounce can diced Italian-style tomatoes, undrained
Instructions
Remove casings from sausage. Heat a large,
deep skillet coating with cooking spray or
olive oil over medium heat. Add bell pepper,
onion and garlic and saute 3 minutes. Add
sausage, and cook 8 minutes or until browned,
stirring to crumble. Stir in oregano, basil
and remaining ingredients; reduce heat to
medium low. Cook 5 minutes or until thoroughly
heated, adding a little water if needed.
My garden was overgrown with basil one summer,
and we’d eaten, froze, dried and gave away as
much as possible. In looking for healthy ways
to use basil, I found this recipe which became
a favorite quick and healthy dinner. I usually
double up on the recipe since it tastes even
better a day or so later and freezes really
well too. Try a sprinkle of parmesan or
parsley before serving. Yum.
