     Pineapple Cake and Frosting

1 Cup Crisco Shortening
2 Cups Sugar
4 Eggs
2 Teaspoons Vanilla Extract
1 Teaspoon Rum-Flavored Extract
3 1/2 Cups Gold Medal Flour, sifted
3 Teaspoons Baking Powder
1/2 Teaspoon Salt
2 Cups Crushed Pineapple, drained (set aside 1/2 cup in separate bowl)
1/2 Teaspoon Baking Soda
Pineapple-Cream Cheese Frosting

Cream shortening and sugar until light and fluffy. Add eggs one at a time, beating until fluffy after each egg. Blend in the extracts.
Sift flour, baking powder and salt together. Stir the baking soda into 1 1/2 cups of drained pineapple.
Add flour and pineapple alternately to the creamed mixture, beginning and ending with the flour. Beat until smooth and glossy.
Pour batter into 1 9x13 inch cake pan. Bake at 350 degrees for about 40 minutes. Cool completely before spreading with Pineapple-Cream Cheese Frosting.
