10 oz. fresh spinach, washed, stemmed and coarsely chopped
8-10 basil leaves, chopped grated parmesan
Instructions
Melt butter in a large saucepan over high heat. Add garlic and saute
until fragrant, about 2 minutes. Add broth and bring to a boil. Add the
tortellini and cook about 5 minutes if frozen, less time if using fresh.
Add tomatoes with their liquid, reduce heat to simmer, cook just until
pasta is tender. Stir in the spinach and basil and cook until spinach is
wilted, 1 to 2 minutes. Serve with grated parmesan.
