Rinse, soak, and cook the dry pinto beans
completely. Do not undercook them! Steam the
rice and corn while you wait. If your crushed
tomatoes are raw, cook them until they are the
consistency of spaghetti sauce. Combine all of
the above into a pot. I found 4 quarts to be
sufficient. Add the remaining ingredients and
let simmer on a very low heat for 15 minutes to
let the flavors combine properly.
