     Garlic Shrimp with Coconut Milk & Tomato

Ingredients
! !/4 pounds hrimp weighed after shells removed
1 tsp EVO
1 red pepper diced
4 scallionss sliced thinly white and green sseparated
1/2 c chopped cilantro divided
4 cloves garlic minced
1/2 tsp salt divided
1/2 tsp red pepper flakes
14.5 oz can diced tomatoes
 
14 oz can coconut milk
1/2 lime squeezed

Instructions
Heat oil over med high heat. Add red pepper and saute till softened. Add scallion whites 11/4 cilantro garlic and red pepper flakes. Cook 1 min.
Add tomatoes and coconut milk & 1/4 tsp salt. Increase heat and bring to a boil. Cover and simmer on low for ten min.
Add shrimp. Cook 5-6 min. Add lime juice.
Divide amongst 4 bowls. About 1 /4 up per person. Top with green onion and cilantro. Avocado slice are also nice.
