Heat oil over med high heat. Add red pepper and saute till softened. Add scallion whites 11/4 cilantro garlic and red pepper flakes. Cook 1 min.

Add tomatoes and coconut milk & 1/4 tsp salt. Increase heat and bring to a boil. Cover and simmer on low for ten min.

|
Add shrimp. Cook 5-6 min. Add lime juice.
|
|
|
Divide amongst 4 bowls. About 1 /4 up per person. Top with green onion and cilantro. Avocado slice are also nice.
