     Cauliflower Rice Pesto Risotto

2 cups cauliflower rice (Trader Joes pre-made)
5 stalks of asparagus
1 cup of mushrooms
1/2 tablespoon of olive oil
1.5 tablespoons of pesto (Trader Joes pre-made)
1 tablespoon mozarella cheese
1 tablespoon parmesan cheese
optional- 1 sun dried tomato chicken sausage (Trader Joes)

Saute the asparagus and mushrooms in olive oil until close to tender in a pan. Optional- for added protein, slice chicken sausage and saute with veggies until browned.
Add in frozen cauliflower rice and cook for three minutes.
Stir in the pesto and mozzarella cheese until fully mixed in and melted to your like. Transfer to a bowl and sprinkle with parmesan cheese.
