     Pesto risotto (3 people)

Ingredients
1200 ml of vegetable/chicken soup
200g risotto rise
100g onion
100g pesto
2 (or more) tomato cherry
60g mascarpone
40g butter
basil
salt
 
oil
parmesano cheese

Instructions
Put the oil and a little of butter in a pan. Cut the onion and add it. Prepare the soup.
Add the rise and 2 cups of soup. Wait until it is evaporated and add 1 cup every time following the same steps. After 15-20 min, add the cheese, a little of butter and the pesto. Put the tomato cherry in the oven for some minutes and add it.
Finally, add the basil and parmesan cheese if you want, Enjoy!!
