     My Favorite White Bread

Ingredients
4 1/2 tsp instant yeast
3 1/2 cups warm water
1/4 cup sugar
1 Tablespoon salt
3 Tbsp butter, cubed at room temp
9 or 10 cups flour (I think I only used about 7)
3 Tbsp butter, melted for brushing
 

Instructions
In a mixer add the warm water and yeast. Let sit 5 minutes. Add the sugar, salt and cubed butter. Mix on the bread setting and add about 3 or 4 cups of flour.
Use the dough hooks to continue mixing and adding flour just until the sides of the bowl are clean. Use the “auto kneed” function to kneed the bread. If you don’t have this function, kneed the bread for about 10 minutes.
Remove dough from mixer and shape it into a large ball. Place the dough in a lightly greased bowl and turn dough to coat in oil. Cover bowl with Saran Wrap. Rise till doubled about 45 mins to an hour.
Shape dough into 2 large loaves. Place dough in greased loaf pans. Rise until double, about 30 to 45 mins. Brush loaves with melted butter. Bake in 400 degree oven for 30 to 35 minutes. After baking, brush the loaves with more of the melted butter. Let sit 5 minutes and remove the loaves from the pans to a cooling rack.
