     Pumpkin Overnight Oats

Ingredients
1 1/2 cups steel cut oats
3 cups water
2 cups milk (any kind)
15 oz. can pumpkin puree
1/4 cup pure maple syrup (or agave nectar)
1/4 cup ground flaxseed meal or chia seeds
1 Tbsp pure vanilla extract
1 Tbsp ground cinnamon
1 tsp ground ginger
 
1/2 tsp ground nutmeg
1/2 tsp ground cloves or allspice
1/2 tsp sea salt

Instructions
Place all of the ingredients into a 4-6 quart slow cooker and stir to combine. Cover and cook on low for 7 hours (overnight) or on high for 3 1/2 to 4 hours, until the oats are soft but maintain a bit of chew. Remove cover and stir.
Serving Suggestions
Suggested toppings- pecans, toasted coconut, dried cranberries, additional agave nectar.
